- 2 pieces skinless and boneless chicken breasts
- 4 cups fresh baby spinach
- 2 tablespoons extra virgin olive oil
- 2 cloves minced garlic
- 1 lemon (freshly squeezed)
- Salt to taste
- Freshly cracked black pepper to taste
- 1/4 cup feta cheese (optional)
Instructions
- Season chicken breasts with salt, pepper, and a drizzle of olive oil.
- Heat 1 tablespoon of olive oil in a skillet over medium heat.
- Add chicken breasts and cook for 6–7 minutes per side, until fully cooked and golden.
- Remove chicken and let it rest for a few minutes before slicing.
- In the same skillet, add garlic and cook for about 30 seconds until fragrant.
- Add spinach and sauté until wilted, adding a splash of lemon juice.
- Slice chicken into strips and assemble into meal prep containers.
- Top with sautéed spinach and any optional toppings (feta, nuts, seeds, or herbs).
- Drizzle with remaining lemon juice before serving.
