Description

This delicious sautéed chicken with fresh spinach and feta is a healthy meal prep option, perfect for busy weekdays.


Ingredients

  • 2 pieces skinless and boneless chicken breasts
  • 4 cups fresh baby spinach
  • 2 tablespoons extra virgin olive oil
  • 2 cloves minced garlic
  • 1 lemon (freshly squeezed)
  • Salt to taste
  • Freshly cracked black pepper to taste
  • 1/4 cup feta cheese (optional)

Instructions

  1. Season chicken breasts with salt, pepper, and a drizzle of olive oil.
  2. Heat 1 tablespoon of olive oil in a skillet over medium heat.
  3. Add chicken breasts and cook for 6–7 minutes per side, until fully cooked and golden.
  4. Remove chicken and let it rest for a few minutes before slicing.
  5. In the same skillet, add garlic and cook for about 30 seconds until fragrant.
  6. Add spinach and sauté until wilted, adding a splash of lemon juice.
  7. Slice chicken into strips and assemble into meal prep containers.
  8. Top with sautéed spinach and any optional toppings (feta, nuts, seeds, or herbs).
  9. Drizzle with remaining lemon juice before serving.
