- 1 cup dried red kidney beans (soaked overnight)
- 1 cup long-grain white rice
- 1 medium onion (diced)
- 1 green bell pepper (diced)
- 2 stalks celery (diced)
- 8 oz smoked sausage (sliced)
- 3 cloves garlic (minced)
- 2 tsp Cajun seasoning
- 2 bay leaves
- 4 cups low-sodium chicken broth
Instructions
- Soak the red kidney beans overnight in water, then drain.
- In a large pot over medium heat, sauté diced onion, green bell pepper, and celery in a splash of oil until soft (about 5 minutes).
- Stir in minced garlic and sliced sausage; cook until the sausage begins to brown.
- Add Cajun seasoning and bay leaves, then pour in chicken broth and bring to a simmer.
- Incorporate soaked beans into the pot, cover, and simmer for about an hour until beans are tender.
- Prepare long-grain rice according to package instructions.
- Serve a generous scoop of beans over rice and enjoy!
Notes
- For extra flavor, consider adding a pinch of cayenne pepper.
- This dish can be made a day ahead and tastes even better the next day.
