- 1 lb boneless, skinless chicken breasts
- 6 cups low-sodium chicken broth
- 1 cup uncooked long-grain rice
- 2 medium carrots, diced
- 2 celery stalks, chopped
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 1 tsp dried thyme
- 1 tsp dried parsley
- 1/2 tsp black pepper
- Salt to taste
- 1 tbsp olive oil
- 1/2 lemon, juiced
- 1 cup frozen peas (optional)
Instructions
- In a large slow cooker, add the chicken breasts, broth, rice, carrots, celery, onion, garlic, thyme, parsley, and black pepper.
- Cover and cook on low for 6-7 hours or high for 3-4 hours until the chicken is tender.
- Remove the chicken, shred it with two forks, and return it to the slow cooker.
- Stir in the lemon juice and frozen peas (if using). Cook for an additional 10-15 minutes.
- Taste and adjust salt as needed before serving.

- This dish can be made with different vegetables based on your preferences.
- For a creamier texture, consider adding a splash of cream before serving.
