Description

Delicious and chewy cookies loaded with oats, chocolate chips, and cranberries.


Ingredients

  • 1 cup (2 sticks) salted butter, softened
  • 1 cup light brown sugar
  • 1/4 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 and 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/4 tsp salt
  • 3 cups rolled oats
  • 1 cup dark chocolate chips
  • 1/2 cup dried cranberries

Instructions

  1. Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy (about 1 minute).
  3. Add eggs and vanilla extract to the creamed mixture and beat until combined.
  4. In a separate bowl, whisk together the flour, baking soda, cinnamon, and salt.
  5. Gradually add the dry ingredients into the wet ingredients and mix until just combined.
  6. Fold in the rolled oats, dark chocolate chips, and dried cranberries.
  7. Chill the cookie dough in the refrigerator for 30 minutes.
  8. Use a spoon or cookie scoop to roll dough into 1 –2 tablespoon-sized balls.
  9. Place dough balls a few inches apart on the prepared baking sheet.
  10. Bake for 10–11 minutes, or until the edges are set but centers are still soft.
  11. Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack.
