  • 2 large eggs
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 1 cup unsalted butter, softened
  • 3 1/2 cups powdered sugar
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup heavy cream
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream (for ganache)
  • 8 ounces semi-sweet chocolate, chopped (for ganache)
  • Extra mini chocolate chips for decoration

Instructions

  1. In a large bowl, beat the butter, brown sugar, and granulated sugar until creamy and smooth.
  2. Mix in the milk and vanilla extract.
  3. Gradually add the flour and salt, mixing until combined.
  4. Stir in the mini chocolate chips.
  5. Roll into small balls and set aside in the refrigerator.
  6. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  7. In a large bowl, combine flour, cocoa powder, sugar, baking soda, baking powder, and salt.
  8. Add eggs, milk, oil, and vanilla, and mix until well combined.
  9. Stir in the boiling water until the batter is smooth.
  10. Divide the batter evenly between the prepared pans.
  11. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  12. Let the cakes cool in the pans for 10 minutes, then remove from pans and cool completely on wire racks.
  13. Beat the butter until creamy.
  14. Gradually add powdered sugar and cocoa powder, alternating with heavy cream, beating until smooth.
  15. Mix in vanilla extract.
  16. Place one cake layer on a serving plate. Spread a layer of frosting on top.
  17. Sprinkle some cookie dough balls and mini chocolate chips over the frosting.
  18. Place the second cake layer on top and frost the entire cake.
  19. Heat the heavy cream until it begins to simmer. Pour over the chopped chocolate and let sit for a few minutes. Stir until smooth.
  20. Pour the ganache over the cake, allowing it to drip down the sides.
  21. Decorate the top of the cake with remaining cookie dough balls and extra mini chocolate chips.
