Description
A delicious treat made with Medjool dates, creamy peanut butter, and dark chocolate, topped with chopped peanuts and flaky sea salt.
Ingredients
Scale
- 20 Medjool Dates (I use Natural Delights brand)
- ½ cup creamy peanut butter (I use Justin’s Brand)
- ¼ cup chopped peanuts
- 1 cup dark chocolate chips
- 1 tsp avocado oil (or coconut oil)
- 1 tsp flaky sea salt, to taste (Maldon is a great brand)
Instructions
- Line a baking sheet with parchment paper for easy clean-up.
- Slice dates in the middle with a sharp knife. If your dates have pits, remove the pits.
- Line the dates up on the parchment-lined baking sheet slit side up.
- Smash the dates with the bottom of a glass cup. Spray the glass with cooking spray so the dates don’t get stuck to it. Be sure the dates are as close together as possible.
- Add a layer of peanut butter on top of the dates and smooth it out gently with a spatula. It helps to microwave the peanut butter for 20-30 seconds in a small bowl first to make it easier to spread.
- Combine the dark chocolate chips and avocado oil in a microwave-safe bowl. Melt chocolate in the microwave by heating it in 30-second intervals, stirring in between until it is melted.
- Pour the chocolate over the peanut butter layer. Smooth it out with the spatula.
- Sprinkle the chopped peanuts and flaky sea salt evenly on top of the chocolate.
- Refrigerate or freeze for at least 30 minutes until everything is set.
- The final step is to cut it into evenly sized pieces.
- Hint: Store in the freezer or fridge and let them thaw at least 10 minutes to room temperature before serving.
Notes
- Ensure not to overcrowd the dates when smashing them.
- Microwaving the peanut butter can make it much easier to spread.
- These can be made ahead of time and stored in the fridge or freezer for later enjoyment.
