Instructions
- Sear chicken thighs in butter until skin is golden and crispy; set aside.
- In the same pan, add Dijon mustard, thyme, and cream. Simmer until slightly thickened.
- Return chicken to the pan, coat with sauce, and simmer for 5 minutes.
- Boil or steam carrots until tender, then toss with butter, honey, salt, and pepper.

- Plate with mashed potatoes, glazed carrots, and chicken topped generously with herb cream sauce.
- Garnish with fresh parsley and serve warm.
