Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment.
  2. In a bowl, whisk together melted butter, olive oil, honey, garlic, thyme, salt, and pepper.
  3. Toss carrots in the mixture until fully coated.
  4. Spread carrots evenly on the baking sheet in a single layer.
  5. Roast for 25–30 minutes, flipping halfway, until tender and caramelized.
  6. Remove from oven, sprinkle with fresh parsley.
  7. Serve warm as a sweet and savory side dish.
