- 2 tbsp honey
- 2 tbsp butter (melted)
- 2 cloves garlic (minced)
- 1 tbsp olive oil
- 1 tsp thyme (dried or fresh)
- Salt & pepper to taste
- Fresh parsley (for garnish)
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment.
- In a bowl, whisk together melted butter, olive oil, honey, garlic, thyme, salt, and pepper.
- Toss carrots in the mixture until fully coated.
- Spread carrots evenly on the baking sheet in a single layer.
- Roast for 25–30 minutes, flipping halfway, until tender and caramelized.
- Remove from oven, sprinkle with fresh parsley.
- Serve warm as a sweet and savory side dish.
Notes
- Adjust the amount of honey based on your sweetness preference.
- Fresh thyme can be substituted with dried thyme if needed.
- For a spicier kick, add a pinch of red pepper flakes.
