Description

Delicious chocolate covered Medjool dates stuffed with mini marshmallows and sprinkled with crushed peppermint.


Ingredients

Scale
  • 12 Medjool dates
  • ½ cup mini marshmallows
  • ½ cup dark chocolate chips
  • 1 tsp avocado oil
  • 2 Tbsp crushed peppermint

Instructions

  1. Line a baking sheet or plate with parchment paper for easy clean up.
  2. Slice your dates in the middle with a sharp knife. If your dates have pits, remove the pits.
  3. Stuff each date with 2-3 marshmallows (optional: add 1 tsp of one of your favorite nut butters before adding the marshmallows).
  4. Place the stuffed dates on the parchment-lined baking sheet.
  5. To harden the stuffed dates and make them easier to coat in chocolate, refrigerate them for 20-30 minutes.
  6. Add the dark chocolate chips and avocado oil to a small bowl.
  7. Microwave it in 30-second intervals, stirring in between until it is melted. Be sure to use a microwave-safe bowl.
  8. Dip stuffed dates in the melted chocolate. You can use a toothpick or a spoon to help with the process of chocolate coating.
  9. The final step is to sprinkle ½ teaspoon crushed peppermint on the top of each date.
  10. Serve immediately or store in the fridge or freezer.
  11. Hint: to coat them in the chocolate, use a spoon, 2 forks, or a toothpick to make it easier and do the open side with the marshmallows first.

  • Crushed peppermint can be made using a candy cane.
  • Feel free to experiment with different nut butters for added flavor.
