Instant Pot Chicken with French Onion Soup Sauce

Description

A delicious recipe for chicken breasts cooked in an Instant Pot with a savory French onion soup sauce.


Ingredients

Scale
  • 3 medium chicken breasts (fresh or thawed, medium size)
  • 2 medium onions (sliced)
  • 4 tbsp butter
  • 1 cup chicken broth (or beef broth)
  • 3 tbsp balsamic vinegar
  • 1 tsp thyme
  • 1 tsp oregano
  • 1 packet french onion soup mix
  • 3 slices cheese (provolone, optional)

Instructions

  1. Season chicken breasts with salt & pepper. Turn Instant Pot to sauté. Begin to melt 2 Tbsp butter. Add chicken to the pot, brown them all on each side. Once browned, remove chicken from the pot.
  2. Add remaining 2 Tbsp of butter to the Instant Pot. Add the sliced onions and sauté until they become slightly tender and translucent. Add broth, balsamic vinegar, thyme, and oregano.
  3. Stir together. Turn the sauté function off. Add the chicken back to the pot. Close the lid and seal the steam release valve. Cook on high pressure for 9 minutes.
  4. Once cooking time is complete, let the pressure release naturally for 10 minutes. Quick release the remaining. Open the Instant Pot, top each chicken breast with a slice of cheese.
  5. Close the lid and let the cheese melt for 1-2 minutes, then remove meat. Add French Onion Soup Mix packet to the pot. Turn on the sauté function, bring to a boil. Once sauce has thickened, turn Instant Pot off. Serve sauce along with the chicken. ENJOY.

Notes

  • For a richer flavor, consider using beef broth instead of chicken broth.
  • This dish pairs well with rice or crusty bread to soak up the sauce.
