A soothing spiced tea that brings warmth and comfort.
Ingredients

- 8 cups filtered water
- 2 sticks cinnamon (or 1/2 teaspoon ground cinnamon)
- 1 piece fresh ginger (sliced, 2-inch piece; or 1/2 teaspoon dried ginger)
- 1 tablespoon anise seeds (or star anise)
- 1/4 teaspoon nutmeg (use ground nutmeg sparingly if needed)
- 2/3 cup granulated sugar (or honey/maple syrup for a twist)
- chopped nuts (walnuts, pine nuts, pistachios, almonds) (use your preferred nuts)
Instructions
- Boil 8 cups of filtered water in a medium saucepan over high heat until boiling, about 10 minutes.
- Add 2 cinnamon sticks, a 2-inch piece of sliced fresh ginger, 1 tablespoon of anise seeds, and 1/4 teaspoon of nutmeg to the boiling water; stir and reduce heat to medium-low to simmer.
- Cover and simmer for 1 to 1 hours to enhance the flavors.
- Stir in 2/3 cup of granulated sugar until dissolved, then remove from heat.
- Strain the tea using a fine mesh sieve into a heatproof container, discarding solid spices.
- Serve in cups with a layer of chopped nuts at the bottom and pour hot tea over them.

- Try using different nuts for variation.
