Description

A delicious and healthy garlic lemon chicken recipe served with vibrant spinach.


Ingredients

Scale
  • 4 pieces boneless and skinless chicken breasts
  • 2 cloves garlic, minced
  • 2 tablespoons extra-virgin olive oil
  • 1 whole lemon, zested and juiced
  • 4 cups fresh spinach, vibrant green, stems removed
  • to taste salt
  • to taste freshly cracked black pepper
  • pinch red pepper flakes (optional)

Instructions

  1. Pound chicken breasts to even thickness.
  2. Season chicken with salt and pepper.
  3. Heat olive oil in a skillet over medium-high heat.
  4. Add chicken and cook for 6–7 minutes per side until golden and fully cooked.
  5. Remove chicken and set aside.
  6. Add garlic to the skillet and sauté briefly until fragrant.
  7. Add spinach to the skillet and cook until wilted.
  8. Stir in lemon juice and zest.
  9. Return chicken to the skillet and toss with spinach and garlic.
  10. Season with additional salt, pepper, and red pepper flakes.
  11. Serve warm.

Notes

  • For additional flavor, marinate the chicken in lemon juice and garlic for an hour before cooking.
  • This recipe can be served with rice or pasta for a complete meal.
