- Prepare the Base: Preheat the oven to 325°F (160°C). Line a mini muffin tin with paper liners. In a bowl, mix graham cracker crumbs and melted butter until combined. Press about 1 tablespoon of the mixture into the bottom of each muffin cup.
- Make the Cheesecake Filling: In a large bowl, beat the cream cheese and sugar until smooth. Add the vanilla extract and eggs, beating on low speed until combined. Spoon the mixture evenly over the crusts in the muffin cups.
- Bake: Bake for 15-18 minutes, or until the centers are set. Cool to room temperature, then refrigerate for at least 2 hours.
- Prepare the Passionfruit Topping: In a small saucepan, combine passionfruit pulp, heavy cream, powdered sugar, and cornstarch if using. Cook over medium heat, stirring constantly, until the mixture thickens and bubbles. Let cool slightly before topping the cheesecakes.
- Assemble: Spoon the passionfruit topping over each cheesecake bite. Refrigerate until ready to serve.
