A delicious and simple dish featuring chicken breasts marinated in a lemon garlic mixture.

- 4 boneless, skinless chicken breasts
- 2 large fresh lemons (juiced)
- 4 garlic cloves (minced)
- 3 tbsp extra virgin olive oil
- 1 cup low-sodium chicken broth
- 2 tbsp fresh parsley or thyme (chopped)
- Salt and pepper (to taste)
Instructions
- Rinse the chicken breasts under cold water and pat dry. Season both sides generously with salt and pepper.
- In a bowl, mix olive oil, lemon juice, minced garlic, and chopped herbs until combined.
- Place chicken in a zip-lock bag or shallow dish, pour marinade over it, ensuring all pieces are coated. Marinate in the fridge for at least 30 minutes (up to overnight).
- Heat a large skillet over medium-high heat with olive oil. Sear chicken for about 5-7 minutes per side until golden brown.
- Add chicken broth and any leftover marinade to the pan. Bring to a simmer while scraping the bottom of the pan for flavor.
- Cover the skillet and reduce heat to low. Simmer for 10-15 minutes until cooked through (165°F/75°C). Serve hot with rice or roasted vegetables.
